Durian Butter Cake  榴莲牛油蛋糕

Ingredients A
250g  butter            (The original recipe is 250g butter & 500g Margarine)
220g Castor sugar  (500gm)
5 egg yolks              (15 egg yolks)

Ingredients B
5 egg whites             (15 egg whites)
15g castor sugar       (50g)
220g durian flesh       (650g)
30ml full cream evaporated milk          (100ml)
0.2gm  vanilla essence 
0.2gm  durian essence  

Ingredients C: (Mix the flour together)
250g Cake Flour (Low Protein)       (The original recipe is using 750g)
1/2 tbsp baking powder
1 tsp soda bicarbonate

Method: 
1. Mix ingredients A, except for the egg yolks in an electric beater at medium speed. Then beat in one yolk at a time and set aside.

2. in another bowl, beat the egg whites and 15g of castor sugar on high speed until it rises and appears fluffy.

3. Then beat the contents of the two bowls together at low speed. Spoon in a moderate amount of ingredients C and keep blending at low speed. Add the evaporated milk , allow it to blend for a couple of seconds and then add the vanilla and durian essences and the durian flesh.

4. Grease the baking pan with shortening or butter and bake the durian butter cake at 150"c for 50 minutes to one hour.
